Insalata Siciliano | Sicilian Fennel and Orange Salad

This cool and refreshing Sicilian salad is the perfect combination of citrus sweetness from the orange sections and the fresh fennel’s delicate and mild anise factor. Because fennel aids digestion, raw slices are frequently served as a digestivo, a digestive aid, at the end of an Italian meal. I like to add toasted almond slivers and sprinkle them on top to add another layer of flavor and more crunch. This simple, elegant salad pairs fabulously with Madrevite’s 100% Grechetto, Elve’.

1 Fennel Bulb

2 Oranges

3 tablespoons EVOO

1/2 cup Slivered Almonds, lightly toasted

Sea Salt, to taste


Chop off the top part of the fennel, all the way down from where to stalk comes out of the bulb.
Cut the bulb in half.
Remove any blemished outer layers.
Thinly slice the fennel and add to a serving bowl.
Peel the oranges and remove any of the white pith with a sharp paring knife.
Detach each section one by one, removing any membranes.
Add the oranges into the bowl with the fennel.
Pour in the Evoo and a pinch of sea salt and toss to coat evenly.
Sprinkle the almonds slivers on top and serve immediately.
