Pangrattato Italiano | Italian Breadcrumbs

Day-old bread is never tossed in Italy! In fact, many have told me it is bad luck, so I make breadcrumbs and freeze them, so they are always on hand whenever I need them.

Ingredients

Day-Old Bread, cut into large cubes

1 Garlic Clove, roughly chopped

Handful of Italian Parsley

Pinch of Red Chili Pepper Flakes

Pinch of Sea Salt

Freshly Cracked Black Pepper

Directions

Add all the ingredients into the bowl of a processor, make in batches if needed. Pulse until the ingredients are finely chopped. Transfer to a glass jar with an air-tight lid and store in the freezer for up to one month.
