Day-old bread is never tossed in Italy! In fact, many have told me it is bad luck, so I make breadcrumbs and freeze them, so they are always on hand whenever I need them.

Day-Old Bread, cut into large cubes
1 Garlic Clove, roughly chopped
Handful of Italian Parsley
Pinch of Red Chili Pepper Flakes
Pinch of Sea Salt
Freshly Cracked Black Pepper
Add all the ingredients into the bowl of a processor, make in batches if needed.
Pulse until the ingredients are finely chopped.
Transfer to a glass jar with an air-tight lid and store in the freezer for up to one month.
