Cuori di Insalata di Palma | Hearts of Palm Salad

This gorgeous salad transports me to the charming Tuscan port town of Santo Stefano, where I sampled this Mediterranean salad for the first time. I like to add cannellini beans and tuna if I am serving this as a main course. Either way, it is a crisp and glorious salad to enjoy year-round. Have a glass of Poggio Grande Syrah with this delectable salad.

1 Head of Hearts of Romaine, cleaned and chopped

1/2 cup Cherry Tomatoes, sliced in half

1/2 cup Olives, pitted

1/2 cup Hearts of Palm, sliced

1/4 Lemon, juiced

1/2 cup EVOO

Sea Salt and Pepper, to taste


In a bowl, whisk together the lemon juice, EVOO, sea salt, and pepper until emulsified. In a large salad bowl, add all the remaining ingredients. Pour about 1/4 of the dressing over the salad and toss. Taste and add 1/4 more at a time until the dressed salad suits your taste buds.
