In my opinion, grilled vegetables tossed in EVOO and lemon juice is simplicity at its finest. I especially enjoy grilling asparagus at the height of its freshness in spring and summer. Spearing asparagus stalks with skewers makes it easier to flip and grill evenly on both sides. I always enjoy a chilled glass of Grechetto wine because it pairs so beautifully with asparagus, famously tough to match. 1 pound Asparagus, trimmed and cleaned
1/4 cup EVOO
2 tablespoon Lemon Juice
1 tablespoon Lemon Zest
Pinch of Sea Salt and Pepper, to taste
Wooden Skewers or Long Toothpicks, soaked in water
Preheat grill to high heat.
Toss the asparagus, EVOO, lemon juice, lemon zest, sea salt, and pepper in a large bowl.
Arrange asparagus spears on a flat surface. Thread skewer or toothpick horizontally through the center of the spears. Thread as many spears that will fit without crowding them. Repeat procedure with remaining asparagus.
Grill 3-5 minutes on each side or until crisp-tender.
Remove asparagus from the skewers and serve immediately.
