Pancetta Prosecco Dressing

Crispy, sweet, and salty pancetta sauteed with aromatic shallots will have your kitchen smelling divine. This incredibly delicious dressing is outstanding tossed with mixed baby greens, hearts of romaine, or drizzled over a wedge of iceberg lettuce.

Ingredients

4 ounces Pancetta, cut into cubes

1/2 Shallot, minced

Splash of Prosecco, or other bubbly varietal

1 tablespoon Red Wine Vinegar

2 tablespoons EVOO

Sea Salt and Pepper, to taste

Directions

In a saute pan over medium-high heat, add the pancetta. Once the pancetta begins to tale on some color, toss in the shallots and cook for 3 minutes. Add a splash of Prosecco, cook, until reduced. Remove from the heat and let cool for at least 5 minutes. Whisk the EVOO and vinegar in a bowl along with sea salt and pepper as desired. Slowly whisk in the pancetta mixture. Refrigerate until ready to toss with greens of your choice.
